Speck Wrapped Preserved Apricot, local fromage blanc and brittle, winemaker’s gastrique – Passed with Viognier upon arrival

Baby radish and sunflower sprout salad, preserved pink pepper raspberries, boursin croustade, golden beet vinaigrette

2nd

Burrata, Appalachian truffle candied walnuts, five spice cherries, mango jam, grasini

3rd

Pansotti, Confit, leeks, port salut, melted shallots, thyme glace

Brook Trout, baby vegetables, scorched hazelnuts, beurre rouge

Wagyu cheek, black trumpet gratin, “dry hopped” bordelaise
